Homemade Sesame Noodles from @quaraneats

The beauty of this sesame noodle dish is that it’s highly adaptable and probably uses ingredients you already have in your pantry. The noodles are made of simply flour, water, and salt and the sauce involves some soy sauce, sesame oil, vinegar, sugar, and garlic! You can make a bunch of noodles at once and freeze them for later. The sauce also works with any noodles or spaghetti shaped pasta if you want to use boxed pasta (great way to eat up that angel hair that’s been sitting in your pantry for far too long). Here’s our best attempt at writing up a recipe, but most of this recipe involves using your intuition and some trial and error. 

Ingredients:

Noodles:

Flour, water, salt

Sauce:

Any of the following: soy sauce, sesame oil, vinegar (we used rice vinegar), sugar, garlic (minced)

Toppings/Garnish:

Scallions, sesame seeds, chili flakes, chili oil

Directions:

1. In a medium bowl, mix together about 4 parts flour to 1 part (warm-is) water and a pinch of salt. It should look shaggy but come together as you need it. Add a tablespoon of water at a time if it’s too dry. Cover and let rest for 1 hr.

2. Once the dough has rested, roll it out as thin as you can. Fold it over itself (like folding a letter) and slice them lengthwise into noodles!

3. Dust noodles with flour to prevent them from sticking together.

4. Boil noodles in water for a few minutes until they are soft and chewy.

5. To prepare the sauce, combine equal parts soy sauce, sesame oil, and vinegar (we used rice vinegar), 1-2 tsp of sugar, and some minced garlic.

6. Drain the noodles and cook in the sauce for a few minutes until the sauce thickens up.

7. Top with chopped scallions, sesame seeds, and chili flakes or chili oil if you want to add some spice!

This super quick and easy recipe is a great way to get a productive day started in quarantine. Follow along …

 

You’re just going to need ½ cup oats, 1 cup boiling water, a scoop of vanilla protein powder, and a splash of almond milk. Plus toppings!

 

Topping Recommendations:

·      My favorite, chocolate chips

·      Strawberries

·      Blueberries

·      Banana

·      Blackberries

·      Peanut butter/almond butter

Instructions:

1.   Combine oats and boiling water in a bowl and cover. Let sit for 4-5 mins.

2.   Then add the vanilla protein powder and a splash of almond milk. If you don’t have any protein powder, you can substitute for 1 tbsp coconut or almond floor + 1 tsp sweetener of choice.

3.   Lastly, prepare toppings! I usually go with some berries, chocolate chips, and of course either peanut or almond butter!

4.   Dig in!
